The Ngugu-Ini Factory, founded in 1958, is situated 1,600 meters above sea level along with the farms that supply it. The high altitude and extremely nutrient rich, red volcanic soil in the area provide for incredible growing conditions.

Producers bring coffee cherry to the wet mills or collection centers. On arrival, they empty their bags onto floor stations and immediately sort out unripe, overripe, and otherwise defective cherries. After that, they use disc pulping machines to remove the skin and pulp and grade the coffee into 3 density grades. Grades 1 and 2 head separately to the next stage of the process: fermentation. Grade 3 is considered low grade and those are handled separately.

The coffees are dry-fermented in painted concrete tanks, typically for 18-24 hours. When fermentation is complete and the mucilage is dissolved, the parchment gets washed in washing channels and graded again by density. The lighter beans float off and the remaining dense parchment will normally be soaked in clean water for up to 24 hours. After that, drying time varies between 12 and 20 days depending on weather and rainfall.

It's always an exciting time when fresh coffees from Kenya arrive. There's really nothing else like them, and their dynamic fruit flavors, acidity, and herbaceousness. In this lot, we're tasting tropical citrus, tamarind soda, and vanilla cream.

Frequently Asked Questions

When Will My Order Ship?

We roast Monday through Friday, and most orders ship the next roast day from when they are placed.

The only exception is any pre-order item, which will ship on the date stated on that item's pre-order page.

Do You Have Recommendations For Brewing?

Yes!

First, we recommend a brewing ratio of about 1:17. So whatever your dose of coffee is for a brew (we recommend weighing your coffee in grams), multiply that number by 17, and use that weight of water to brew.

Second, always try to grind your coffee fresh, directly before you brew. This will significantly impact the flavor.

Lastly, and maybe most important, always use the highest quality water you can. Filtered is always best. Coffee is 98.5% water, so the water you use makes a huge difference.

Is ReAnimator Coffee Organic/Fair Trade?

While some of our coffees may happen to be certified organic or fair trade, we do not specifically look for either of these certifications when sourcing coffees, and do not market them as such.

All of our coffees are bought at fixed prices above the c-market, and 99% of the time we are paying higher prices than the Fair Trade Certified price.

Our sourcing goals are always quality and flavor focused, and we buy from producers and importers we trust to provide us with coffee that fits into our ideology.
